Top Notch Tabouli
We've been doing this fasting bit for a while now. And folks are probably over it. Still, I got a handful more helpful recipes to inspire you, to do that thing. Today is a treat from the middle east. Like, Turkey or Greece. It's a springtime salad, the likes of which you've probably rarely seen. But never fear! Because I've once again done the research, so you don't have to. As the title promised, today I'm talking tabouli. And if you wanna know what the deal is, come on, kids! Let's get into it.
In case you haven't looked it up already, tabouli is a salad, much like any other. Unlike others, however, it's not made with lettuce. Or spinach. Or even potatoes, for that matter. No, it's a base of bulgar (Cracked wheat berries..) Topped with a blend of green, aromatic herbs, and dressed with a lemon juice dressing. It's a recipe that's been around a thousand years, but to make your own at home, you'll need:
1/2 cup bulgar
3 tomatoes, chopped , or cherry tomatoes
1 cucumber, peeled and chopped
1 bunch parsley, part of the stems removed, washed and chopped
3 tbsp fresh mint leaves, stems removed, washed and chopped
2 green onions, white and green parts, chopped (optional)
1 can pitted black olives
3-4 tbsp lemon juice (lime juice, if you prefer)
3-4 tbsp extra virgin olive oil
You'll start by washing the bulgar, and then letting it soak in water for 5 to 7 minutes. drain in a colander, and press to remove any excess water. Then, set it aside.
Next, combine all your chopped herbs and vegetables in a large mixing bowl, and stir gently to mix, adding in the bulgar from earlier.
Mix your olive oil with your citrus juice, and drizzle over the salad. I would pair this with green tea or kombucha. But whatever you decide, enjoy!
hope that blessed you. If so, please consider buying me a cup of coffee, to keep me going.
