I'm sorry. I know most of y'all never heard of this splendid stuff. But that's okay, as I once again did some research, so you don't have to. It's a middle eastern desert, traditionally made with filo pastry, custard and honey. But that version takes hours to prepare. So I have a cheater method you can do in minutes. Now, if you're ready, grab your trusty spoon, get set, and let's get into it!

First, I should say, if you're a traditionalist, or you just like hard things, feel free to look up the classic recipe. Personally, I don't have the time, but I do enjoy good food. Which is to say, if you want to grab my method (I didn't invent this.) You're going to need:

1 cup shredded wheat (crushed.)

1/2 cup vanilla pudding, or yogurt

1-2 tbspn chopped pecans (Any tree nut, really.

2 tbspn honey

Now, originally, the filo is cut in strips and marinated for days, soaking in sweetness. But a long time ago, some Greek cooks in America found a way to get the same effect faster.* They call it Knafeh, but that's what I  it bring you today.

Start by putting the shredded wheat crumbs into a bowl. Top that with the pecans, or mix them in. Spoon your pudding or yogurt onto the mixture. And finally, drizzle the honey on the lot of it. You could also use brown sugar, but it's not traditional. Also not traditional, but tasty, is adding fresh berries.

You can dig in, but I like to let it rest and come together for a couple minutes first. Stir it so everything gets blended, and enjoy! I like to pair it with black coffee.

*What to Cook Today

I hope that blessed you. If so, please consider buying me a cup of coffee, to keep me going.
