Slap-Dash Ceviche
Alrighty, everybody! We’re Rolling out even more recipes, to feed you body and soul this season. Today’s gonna be super duper simple. This one helped me get through colege on a budget, while still being kinda fancy. The thing is, fancy doesn’t have to be a lot of work. And today, I’ve done the hardest part (research) so you dont have to! This recipe serves one, and it’s a great lunch, but I’m sure you can increase it, and serve it whenever. Okay, folks! Ready or not, let’s get into it!
I call this “Slap-Dash” because it’s way faster than traditional Ceviche. To do that, you start with raw fish, and you let the marinade “cook” it. That means soaking in lime juice and vinegar for at least 5 hours. I’ve done that, but it’s tedious. So, I figured out how to get the same stuff, with canned fish, in 15 minutes. Which was much easier. And that’s what I’m sharing with you. To make this, you’ll need:
1 can of Sardines, packed in only water or oil.
1/2 a fresh lime
pickled (or fresh) Jalapenos
tortilla chips or tostadas
You’ll probably want to drain at least half the augua pesca (fish water) off, so your cevche isn’t soggy. You could throw it out, but it’s good in all kinds of recipes. At this point, put your fish in a medium bowl. Next, add the juice from that half a lime, and a tablespoon or two of the pickled Jalapenos. And it’s pretty much ready! If you wanna go super fancy, you could add chopped onion, but you don’t have to. Either way, once everything’s together, stir with a spoon and break up the Sardines before getting your chips.
Once you’ve done all that, you have two options. Maybe three. A lot of people just scoop it out with chips, just like a sauce. Or you could put broken chips in another bowl, and dump the Ceviche on top. If you do that, sprinkle more chip bits on top to make it look better. Actually, I put the chips first, then the fish, and go from there. I should warn you, that can lead to soggy chips. But any way you do it, I’m pretty sure you’ll like this recipe. Enjoy!
I hope that blessed you. If so, please consider buying me a cup of coffee, to keep me going.
