Breezy Banana Bread
If you have some other recipe, passed down from your great grandmother after she fired canons in the civil war, go ahead and stick with that. I just want to bless everyone else. Which is why I did some research, so you dont have to. But this stuff is great! you can make a half-batch for breakfast, or give out loaves for Christmas. Otherwise, it works any time of day, even for snacks and desert. Oh man, I'm making myself hungry just talking about it. So, if ya'll think that's enough, grab your mixing bowl, and let's get into it!
This might sound kind of familiar, but I swear, I came up with this recipe all by my lonesome. It's so easy, a well-trained cat could almost do it. It's pretty affordable. And it's one of those what's locked in every food group, so it's super nutritious. Not to mention, you've probably already got all this stuff. Still, to make one, you'll need:
1/2 cup All Purpose flour
1/2 cup white sugar
A handful of chopped nuts (any)
And one of raisins
1 ripe bananas
1 egg
In a large mixing bowl, go ahead and combine all of the dry ingredients. And you're already just about halfway there! Didn't I say this was easy? Anyway, now seems like a good time to talk about substitutions. A lot of people like walnuts, but pecans are easier to get in Texas. Still, you can use any tree nut. You can also use 50% whole wheat flour, but too much throws off your balance. And you could also switch to brown sugar. But use half as much, because it also impacts your balance.
Into a smaller mixing bowl, slice the banana. Then, I like to cut the slices in half before just going to town on them with a fork. The end result should be wet, but thick. Like banana sauce. Next, you'll add your egg to that bowl, and beat them in untl the mixuire is thoroughly combined. At this point, there's not much to say. you're trucking right along at this point.
Next, you'll pour that mixture into the bigger of your bowls. And then, just keep on mixing until you're sure there's no more dry bits. Once it's combined, you'll scoop all the batter into a loaf pan, and microwave that on high for 5 minutes. After that, remove it carefully while avoiding escaping steam, and enjoy!
A quick note: You could double this, and/or use a conventional oven. If you do, I'd reccomend 350 degrees (Farenheit) and checking regularly after 10 minutes, as I've never tried that. (yet.)
I hope that blessed you. If so, please consider buying me a cup of coffee, to keep me going.
