A Hot Little Italian Number
Hey folks! Here we go again. Today, more meatless meals for your munching. Because we all know, fish aren't really meat. At least, that's something I heard. Anyway, in case that title made you sweat behind the collar, don't worry. I'm gonna fill you in on a classic, known as Pasta, Ascoli style. It comes from the rustic Italian countryside, and I've researched it so you won't have to. It not only covers all the food groups for nutrition, It's also relatively quick, affordable, and a great pantry standby in a pinch. So, slip on something comfortable, and lets get into it!
As you may not know, my family isn't originally from Italy. But more to the point, we've always loved good food. And for that reason, I'm gonna share with you a recipe my family's had for a long time. We didn't come up with it, and you might find other versions out there. But if you wanna make what we make, your gonna need:
1 tspn. dried Basil
¼ cup extra-virgin olive oil
½ cup olives
1 tspn anchove paste
3 cups (one 28-ounce can) canned tomato
12 oz canned tuna
1 pound pasta (zini, pene, or rotini work well.)
Firstly, you should pour your pasta into a pan, cover it with water, and boil the water for 7-8 minutes. This may not be the way you learned it, but I find it's safer, and super effective, compared to adding your pasta to boiling water. Some people add a pinch of salt to the water, but you don't have to, and your doctor will thank you for leaving it out.
Next, heat your olive oil in a large skillet, and then, add your tomatoes and basil, anchove paste, and olivs. Break up your tuna in chunks last. If you stir too much, it'll crumble into tiny flakes.
Go ahead and portion your pasta into bowls, and top it with your finished tomato and fish sauce. Traditionally, it's garnished with shredded parmesan cheese and little yellow peppers, but you can dress it how you like. Maybe try mozzerella and red pepper flakes That's about everything. Enjoy!
I hope that blessed you. If so, please consider buying me a cup of coffee, to keep me going.
